Roasted saddle of lamb with sautéed potatoes & fresh mint sauce

Seared lamb shank Terrine with spring cabbage, apple & nut coleslaw

Spring Lamb shoulder ragout with peas, broad beans & baby spinach

Apricot & vanilla semifreddo "ice cream sandwich" with pistachio nut wafers
